TGIF!

Happy Friday readers! Your requests for the peach pie I made is below. (Thanks again to Mandy for passing it along!)

What do your weekend plans look like? The mister and I are off to spend time with family - our niece is turning one! (It seems like just yesterday she was this tiny little 4 lb. person, now she's almost a year old!) I have a fabulous group of guest bloggers lined up for next week so be sure to stick around for them!
(I don't know what this is but it looks like a perfect vacation drink!)

Peach Pie

Crust:
1-1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 cup cold butter

Filling:
4 cups unsweetened sliced peaches (about 6 medium)
1 cup sugar, divided
2 tablespoons all-purpose flour
1 egg
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1 cup (8 ounces) sour cream

Topping:
1/3 cup sugar
1/3 cup all-purpose flour
1 teaspoon ground cinnamon
1/4 cup cold butter

Directions:
In a small bowl, combine flour and salt; cut in butter until crumbly. Press into a 9-inch pie plate.
For filling, place peaches in a large bowl; sprinkle with 1/4 cup sugar and toss gently to coat. In another bowl, combine the flour, egg, vanilla, salt and remaining sugar; fold in sour cream. Stir into peaches.
Pour into curst. Bake at 400 degrees for 15 minutes. Reduce heat to 350 degrees bake for 20 minutes. Increase heat to 450 degrees.
For topping, in a small bowl, combine the sugar, flour and cinnamon. Cut in butter until crumbly. Sprinkle over top of pie. Bake 15 minutes longer or until topping is browned. Cool on a wire rack. Store in a refrigerator. (Yield: 6-8 servings)

Enjoy your weekend. Have fun at the birthday celebration. The time just flies. i can't believe my oldest nephew is going to be 6 at the end of the month!!!

I really wish I could pull a Harry Potter and teleport myself to Ohio when you meet up with Mandy this weekend. So jealous!

What am I doing this weekend? Well, since I finished "Love Walked In" while I was in Mexico, I will be reading "Belong to Me" by the pool because someone got me all addicted to these two sweet books. :-D Have an awesome time with Madison!! :)

Squeals! Teeny babies all grown up! Have fun!

We've got an exciting weekend planned of an all day childbirth class. ugghhh, I hope they don't expect me to actually get on the floor or anything. I'll practice my breathing from the chair, thankyouverymuch. Try not to be too envious of my inevitable huffing and puffing this weekend :)
