Eat It: Asparagus and Spinach Risotto
Oh, it was good. I mean, good. I was nervous because I'd never made risotto but it was surprisingly easy! I'd say from start to finish it only took about 30 minutes. (I don't have a dutch oven, and the first time making it I didn't have the onion, nutmeg, or the right amount of cheese, and it was still delicious!) You should definitely make this!

A dear friend of mine shared this with me, and it was exactly what I needed. While I don't have the same story as the author, there have been times when I've smiled through my frustration, even though I'm happy for others who were celebrating. This re-assured me that timing is not mine, and to be okay with that.
