Eat It, Read It, Need It!

Happy March! Today I'm excited to introduce you to a new monthly series... 
Each month I'm going to share a new recipe I've tried recently, something I've read and want to recommend, and something I am craving, want really need.

Eat It: Asparagus and Spinach Risotto
Oh, it was good. I mean, good. I was nervous because I'd never made risotto but it was surprisingly easy! I'd say from start to finish it only took about 30 minutes. (I don't have a dutch oven, and the first time making it I didn't have the onion, nutmeg, or the right amount of cheese, and it was still delicious!) You should definitely make this!

Read it: Waiting well

A dear friend of mine shared this with me, and it was exactly what I needed. While I don't have the same story as the author, there have been times when I've smiled through my frustration, even though I'm happy for others who were celebrating. This re-assured me that timing is not mine, and to be okay with that.

I love this series! That risotto looks delish! I made a spinach & asparagus risotto in December - so yummy!

That risotto sounds awesome - Lisa sent me a recipe for an asparagus/spinach risotto and I still need to try making it!
