The easiest salad ever

Can you believe I've been doing this series for a month already? It's really making the summer fly by!
Each week I'm going to share a recipe I've found, and my experience in making it. Twelve weeks of summer, a dozen recipes to explore. I've tried new recipes before, but I really want to enjoy the time in the kitchen that it takes for me to create these. Whether they turn out well or not, I want to find joy in baking or cooking.

Remember that pie that was almost no bake? If you can believe it, this is another great summer recipe that is easy and no bake! In fact I would estimate it takes about 15 minutes to make. Hooked yet?


I got this recipe from my mom - it's actually been something I make occasionally so it's not totally new to me, but it's too good not to share.

Garbanzo Bean Salad



Ingredients:
2 16-oz. cans garbanzo beans
1/2 cup finely chopped celery
2 tablespoons chopped fresh parsley
1/3 cup Newman's own light balsamic vinegarette dressing
1/4 teaspoon salt
1/8-1/4 teaspoon pepper
1/4 cup finely chopped onion
1 medium diced tomato

Directions: In a bowl, combine (by stirring) beans, celery, onion, parsley, vinagrette, salt, and pepper.


 Add tomato, stir gently.


Aaaand, you're done. (I told you it was easy!) I usually chill it for an hour - I think it tastes better cold, and it gives it time to soak in the dressing.

Yummy! I love cold bean salads. White bean, lemon, and parsley is another fave.
