I had a food moment

I am so excited about today's recipe! This was shared by a friend (who got it from her mom), and since she gave me the clear to put it on the blog I couldn't wait to tell you all about it!

Each week I'm going to share a recipe I've found, and my experience in making it. Twelve weeks of summer, a dozen recipes to explore. I've tried new recipes before, but I really want to enjoy the time in the kitchen that it takes for me to create these. Whether they turn out well or not, I want to find joy in baking or cooking.

I had a major food moment with this salad. As in, the mister was talking to me and I tuned out what he was saying because I was so focused on the glorious salad in my mouth. It takes about five minutes to make and it is ah-mazing!

Strawberry & Spinach Salad

2 bunches spinach, rinsed and torn into bite-sized pieces (I used pre-packaged baby spinach because I'm lazy and it's easy)
4 cups sliced strawberries
1/2 cup vegetable oil
1/4 cup white wine vinegar
1/2 cup white sugar
1/4 teaspoon paprika
2 tablespoons sesame seeds
1 tablespoon poppy seeds

Directions: In a large bowl, toss together the spinach and strawberries. In a medium bowl, whisk together the oil, vinegar, sugar, paprika, sesame seeds, and poppy seeds. Pour over the spinach and strawberries, and toss to coat.

The spinach can get a little wilted so I'd recommend not adding the dressing until right before you serve it.

I really cannot stress how simple and delicious this was!

It's sweet, but a little tart, and so light and refreshing! Yum! (Forget garbanzo beans - this is my new favorite summer salad!)

Is this something you think you'd try? Do you have a favorite salad recipe?

This looks amazing. Perfect for summer!

I need to look for sesame seeds again. We looked for them not too long ago for a stir-fry we were making, but we couldn't find them anywhere!

I've put strawberries on my spinach salad before, but that's definitely a different dressing. I might try that for lunch!

I have made a dressing that is similar I think! I need to dig out my mom's poppy seed dressing. It is one that I love! It's also good to toss some chopped green apples in there if you want something a little tart. Mmm...

Mmmmm, that looks so good! I love salads with strawberries in them. I have never made dressing and I am a little nervous to try!

That dressing sounds awesome!!

Strawberry + spinach + goat cheese + honey mustard + almonds = my favourite salad EVER in the summertime. This blog post made me want to go get the ingredients for that recipe asap. Strawberries just add so much to a salad!!

I think this sounds fabulous. I love adding any sort of berries to salads in the summer. Blue berries and strawberries are my favorite.
