So...remember when I mentioned a coffee recipe a friend shared with me last week? (You know, the co-worker who shares my love of sonnets?) I got the okay from her to share it with the blogosphere so you can thank
C (as I'll refer to her from now on) shared this treat with me on a day when I was seriously needing caffeine, but didn't want to drink the bitterness that is coffee.
Here's what you'll need:
Your favorite mug, some chocolate (or dark chocolate) almond milk (for this post I had soy milk because I couldn't find almond milk at the store - the almond milk is much better!), and a pack of Starbucks Columbia VIA.
Fill your mug about half full of the almond milk, and then heat it up for a minute or so in the microwave.
Stir in your VIA...
Add a little bit of hot water....and enjoy.
That's it! It's delicious, will give you the caffeine boost you need, and is such a treat in the morning - like drinking chocolate coffee.
And what better to go with chocolate coffee than No Bake Chocolate Peanut Butter Chews?
This recipe is from Oh She Glows, but I was made aware of it by the lovely Kyla. I know it probably seems like I say this a lot, but this recipe was so easy! (Yes, those are all the ingredients required).
And yummy. Mmm.
I altered the original recipe, only because I didn't get all vegan products. However, I'd never used rice syrup instead of sugar and it was interesting to know that can be a substitute.
However, when it got to the part of wetting your hands and forming the dough into balls? Epic fail. I don't know why I couldn't get it to work, so I improvised.

It's like a rice krispie treat only richer and more chocolate-y and peanut butter-ey. In fact, it's not like a rice krispie treat. It's better.
I thought it was weird that the recipe only made seven, but I had plenty of ingredients to make another batch. I understand why now too - they're so rich, you really shouldn't have more then seven at time. (And for the record, no I did not eat them all. Although I was tempted).
However, combining one of these chews with my new "treat" coffee? That makes for a divine morning indeed.

Oh my gosh, that coffee drink looks awesome! And so do those peanut butter chocolate treats. I love a little treat with my coffee on weekend mornings. I tend to go for banana bread or something like that. But how could I go wrong with peanut butter and chocolate?!

I just made beef and bean enchiladas last night and OMG. SO DELICIOUS. I may be sharing the recipe later this week. Super simple and a taste of Mexican in my own home. :) Can't beat that if you ask me!

I will definitely try those! I find that Rice Krispy treats are universally loved, so these should be a hit in Bible study.

I treat myself to a peach black iced tea every Friday. I drink home-brewed coffee the rest of the week, but Fridays are tea day. They used to be latte day, but I don't like the taste of soy lattes. I find soy to be super super sweet. Me no likey.
